Banana and cinnamon chocolate chip muffins

I discovered some bananas lurking beneath the Halloween debris and sadly they were too far gone to eat! They made wonderful cake with cinnamon and chocolate chips though – and there was enough mix left over to make some lovely muffins!



This recipe is based on a banana cake recipe you can find here. Ingredients:

3/4 cup butter

1 cup dark brown sugar

1 and 1/2 cups self raising flour

3 eggs

5 too ripe bananas

1 tbsp cinnamon powder

1/2 cup chocolate chips

(This gave enough mixture for a cake (2lb loaf tin) and six muffins and the recipe can be adjusted depending on how many bananas you want to use).



(1) Preheat oven to 180 C.



(2) Mash the bananas.



(3) In a separate bowl, whisk the butter and sugar until creamy. Add the eggs and mix in.



(4) Add the banana to the butter/sugar/egg mixture and stir in.



(5) Mix in the cinnamon and chocolate chips and stir.



(6) Add the flour and stir until completely mixed.



(7) Pour into loaf tin and/or muffin cases. I greased and lined the loaf tin first and the cake slid out easily.



(8) Bake. The original recipe recommended 40 minutes at 180 C then a further half an hour at 150 C. The muffins cooked beautifully in this time but the cake took a bit longer – check with a skewer.



(9) Allow to cool on rack before eating!
